Shake things up this summer

Getting ready for KZN summers are easy with a quick mocktail, suitable for the whole family. Try one of these easy recipes to kick off the festivities, and enjoy them while you sit pool side and take in the warm weather and good company.

Lemon and peppermint tea mocktail

Ingredients:

1 Cup boiling water

Soda water

2 Peppermint teabags

2 Tsp lemon zest

2 Tbsp lemon juice

2 Tsp honey (optional)

 

Method:

1. In a large jug, brew your peppermint teabags in boiling water and add in your honey if you’re using any. Place your jug in the fridge for 1 – 2 hours to cool the tea down.
2. If you’re using fresh lemons, now is the time to zest and juice them.
3. Remove your cooled tea from the fridge, add in your lemon zest and juice and stir together well.
4. Add in extra slices of lemon and mint leaves for garnish.
5. Fill your glass with ice, pour in the tea, top it up with soda water and serve.

 

Apple cranberry coolers

Ingredients:

100% cranberry juice

1L Appletizer

Crushed ice

Soda water (optional)

 

Method:

Mix together equal parts of 100% cranberry juice with Appletizer and pour over crushed ice. If you prefer a watered-down drink, top off with some soda water. And enjoy!

 

Lemon and watermelon mocktail

Ingredients:

Frozen watermelon slices

Lemonade

Crushed ice

Soda water (optional)

 

Method:

Prepare your watermelon slices by slicing and freezing overnight.

1. Blend your watermelon slices in a blender until smooth.
2. In a glass, add in some ice, equal parts of lemonade, soda water and the watermelon blend. Stir together and garnish with lemon slices and one or two sprigs of mint leaves.
